Oatmeal made in the oven, super easy, protein-rich, without any added sugar and delicious! Anyone who knows my microwave cupcake recipe will definitely love this recipe, because it is quite similar.

For this recipe you need:
- Plant-based drink or milk
- Oat flour
- Banana
- Psyllium
- Protein powder
- Baking powder
- Dark chocolate chips (optional)
What plant-based drink can I use?
I personally used almond, but you can use oat (sweeter and more caloric), soy or rice, for example. Another option is to use milk or water, however with water it has less flavor.
Can I substitute the banana?
You can remove the banana, however it may become a little drier. One option is to let it cook less time in the oven.
Can I use another flour?
You can use any flour or even grind oat flakes and use them as oat flour in this recipe. Flours such as whole wheat, spelt or rye will look equally good.
Where can I find Psyllium? Can I substitute it?
Mine is from the Iswary brand and you can find it here, this product helps give density to the dough without it containing flours, besides being a very fiber-rich product. I use it in this recipe to boost the amount of fiber and also to give density to the dough.
You can substitute with coconut flour, 15 grams will do, or don't use anything else, the dough will be more liquid but there is no problem at all.
What protein to use?
Any protein will work well, however the one I used is one of my favorites at the moment, the flavor is chocolate chip and it is simply incredible and perfect for this recipe. Another flavor of the same protein that will look equally good is brownie, cookie or nutchoc flavor. I leave here the link of the protein I present in the image below.

First step
Preheat the oven to 185ºC (365ºF).

Second step
Mash the banana with a fork.

Third step
Place all the ingredients, including the mashed banana, in a container and mix everything well with a fork. Let it rest for 1 or 2 minutes.

Fourth step
Place the batter in small molds like ramekins and bake for 15/20 minutes in the oven.

Fifth step
Serve as desired.
