Are you a fan of custard tarts? So today I bring you an option for custard tarts without any added sugar and without puff pastry, with a wonderful crunchy base and a super easy to prepare cream!
These custard tarts:
- No added sugars
- Have 5 grams of protein each
- Have half the calories of conventional ones
- Are easy to prepare
For this recipe you need:
- Eggs
- Vegetable drink
- Oat flour
- Almond flour
- Corn starch
- Stevia or other liquid sweetener
- Vanilla yummy drops or essence
- Coconut oil
- Cinnamon stick
- Lemon peel
Which vegetable drink to use?
I personally prefer oat drink for this recipe, milk will also work well. Other vegetable drinks may not be as pleasant but it will work.
Where to find stevia or liquid sweetener?

Where can I find almond flour? Is it mandatory?
It is not completely mandatory, but it certainly helps to give a more pleasant flavor and consistency to the custard base, since just oat flour would be a little drier.
Can I use another oil?
Yes, 100% sunflower oil or olive oil work equally well.
Where can I find vanilla yummy drops?
I use Prozis and you can find it here. Vanilla essence is available in any supermarket.
What other sweetener can I use?
Any sugar will do, such as honey, agave syrup, brown sugar, yellow sugar, among others. The amount would be between 20 to 30 grams of these, but liquid sweetener helps to sweeten without adding calories and more carbs.

First step
In a container, place all the base ingredients and mix well until it forms a malleable dough. Let it rest in the refrigerator for 10 minutes.

Second step
Preheat the oven to 185ºC.

Third step
Take a small portion of the dough and knead well until it forms a flat circle and place it in a non-stick muffin tin. Press the dough well onto the sides and bottom of the tin to form a "cup" shape.

Fourth step
Do the same for the rest of the dough and bake in the oven for 15 minutes.

Fifth step
After 15 minutes remove from the oven and prepare the filling.

Sixth step
Add the vegetable drink, cinnamon stick, and lemon peel to a pot. Turn the heat to medium and bring to a boil.

Seventh step
Let it boil for one or two minutes and remove the cinnamon stick and lemon peel.

Eighth step
Lower the heat to minimum and add the vanilla. Mix the liquid well.

Ninth step
While stirring, add the corn starch and the already beaten egg.

Tenth step
Let it cook for a few minutes until it gets creamier.

Eleventh step
Turn off the heat and add the cream to the baked tins. Bake in the oven at 200ºC for 10 minutes (top heat).
