Recipe for tiramisu without any added sugar and protein-rich, and to make it better, I also made the sugar-free "cookie", that is, you have here the complete recipe for an "ALÀ ANA" tiramisu. I say "cookie" because I made a very simple cake as a substitute, which you will see more below.
For the cake you need:
- Eggs
- Vegetable drink or milk
- Cookie flavored oat flour
- Unflavored oat flour
- Baking powder
- Cold coffee
For the cream you need:
- Mascarpone Cheese
- Natural whipped fresh cheese (quark cheese)
- Egg whites
- Protein powder vanilla or cookies & cream flavor
- Cocoa powder
In what pan to make the cake/cookie?
I made it in a large rectangular pan and then cut it into strips to use as a cookie.
Can I use unflavored oat flour?
Yes, however you have to sweeten it somehow if you want the recipe minimally sweet. You can sweeten it with vanilla or some sugar like agave syrup, honey, among others.
Can I substitute the mascarpone cheese?
The cheese can indeed be replaced by a leaner one, for example, Philadelphia-type cream cheese. Another option is to use more fresh cheese, however I advise a very dense one, such as Lidl Milbona (rectangular package with blue tones) or Aldi.
Which fresh cheese to use?
My advice is to use a very dense one so the cream doesn't get too liquid and it doesn't become a "soggy" tiramisu, for example the ones I mentioned in the question above. Another option is to use protein yogurt or vanilla flavored fresh cheese, for example YoPro yogurt or Lidl vanilla whipped fresh cheese. Both are dense, which is great.
Are egg whites mandatory?
In my opinion they help a lot in the density of the cream, it is much fluffier with the egg whites, however it is something that can be removed, since it does not change the flavor.
Can I remove the protein?
You can, however it is advisable to sweeten it somehow if you want it to be a bit sweet. You can use vanilla yummy drops or some sugar to taste.

First step
Preheat the oven to 185ºC.

Second step
Add all the cake ingredients to a container, except the coffee and baking powder. Mix everything well.

Add the baking powder and mix.

Place the batter in a large rectangular pan and bake for 25 minutes.

Fifth step
While the cake is baking, make the cream. Beat the egg whites until stiff peaks form.

Sixth step
In a separate container, add both cheeses and the protein. Mix everything well.

Seventh step
Gradually add the cheese cream to the egg whites, mixing gently.

Eighth step
When the cake is baked, remove from the oven and let it cool.

Ninth step
Cut the cake into strips and dip the strips in the cold coffee. Place some coffee-soaked strips in a dish and spread some of the cream on top.

Tenth step
Repeat the process until the ingredients run out. (Usually two layers).

Eleventh step
Dust cocoa powder over the tiramisu. Store in the refrigerator.
